cinnamon streusel donuts
These are perfect with a cup of tea, perfect for a breakfast on-the-run, and would even make good muffins (if you don't have a donut pan).
Assembling these little beauties is so easy. Whisk together sugar, eggs, yogurt, vanilla, and oil.
Fold in flour, baking soda, and salt.
In a separate bowl, use a pastry cutter or fork to mix brown sugar, butter, oats, and cinnamon until they resemble coarse crumbs.
Place your donut batter into a Ziploc bag and cut one corner off with scissors. Grease the donut pan and gently fill with batter. (You'll want to do a bit more even job of it than I'm doing in the picture...it's hard to fill a donut pan with one hand and take a picture with the other!)
Sprinkle the tops of your donuts with streusel mixture and bake at 375 for 9-10 minutes. Your streusel will probably get everywhere, and that's okay. It just means more crumbs for you to eat while you are taking the donuts out of the pan.
And that's it...so simple. So delicious.
Cinnamon Streusel Donuts
Adapted from Cinnamon Streusel Baked Donuts on Tasty Kitchen
1/3 cup sugar
1/4 cup vegetable oil
2 T. plain yogurt
1 t. vanilla extract
1 cup flour
1 t. baking powder
1/4 t. salt
For the streusel topping:
1/4 cup brown sugar
2 T. old-fashioned oats
1 T. butter
1/2 t. cinnamon
In a bowl, whisk together sugar, eggs, oil, yogurt, and vanilla until smooth. Gently fold in flour, baking powder, and salt. Pour batter into a Ziploc bag and cut an opening in one corner. Grease a donut pan and fill molds with batter by squeezing through the opening in the Ziploc bag.
To make streusel, use a pastry cutter or fork to combine brown sugar, oats, butter, and cinnamon; mixture should resemble coarse crumbs. Sprinkle streusel over tops of donuts.
Bake donuts at 375 for 9-10 minutes. You may need to gently press streusel back into the tops of warm donuts. Makes 6 donuts.
